3 Medium Sweet Potatoes
2 Tablespoons of Hawkwind Heat
2 Tablespoons Honey
1 teaspoon coarse Salt
1 teaspoon coarse Pepper
1 medium to large Onion (thinly sliced)
1 cup shredded veggie jack cheese
1 1/2 Tablespoons butter
Preheat Oven to 375 F
Bake potatoes until soft (about 45-60 minutes)
Allow to cool and peel
Whip with an electric mixer until smooth
Add Hawkwind Heat, honey, salt and pepper mixing thoroughly
Lower Oven temp to 350 F
Saute onion in butter until soft
Add 1/2 of the onions to a 2 qt. casserole and cover with half of the potato mixture
Cover potato mixture with 1/2 of the veggie jack
Cover cheese with sweet potato, add onion and top with the remaining cheese
Back uncovered for about 30 minutes or until cheese lightly browns
