3 pounds unpeeled small Yukon Gold Potatoes
2 Tablespoons of vegetable oil
3/4 stick of butter, room temperature
1/4 cup of fresh chopped parsley
1 Tablespoon Hawkwind Heat
Preheat oven to 350 degrees. Rub each potato with oil and place on rimmed baking sheet. Bake until very tender, about 1 hour. Remove from oven, and leaving potatoes on baking sheet, use a potato masher gently to smash to about half their original size.
In a sauce pan melt butter, add Hawkwind Heat and parsley. Bring to a quick boil while stirring.
Transfer potatoes to a serving dish and pour butter mixture over potatoes.
