1 can Hominy, or 2 cups freshly grilled corn on the cob, removed from the cob
1 Tablespoon extra virgin olive oil
1 medium red onion, chopped
1 serrano pepper, diced
1/2 sweet bell pepper, red or green, chopped
2 Tablespoons ginger, ground fresh
1 Tablespoon garlic
1 Tablespoon cilantro
2 Tablespoons Clem's Hot Pepper Relish
1 teaspoon lemon juice
1 teaspoon black pepper
pinch of salt
Heat oil, add onion, serrano pepper and bell pepper, cook at medium heat for 3-4 minutes. Add garlic, ginger and hominy. Bring up to heat, about 5 minutes. Add Hawkwind's Clem Hot Pepper Relish, lemon juice, pepper & salt. Stir and heat 5 minutes. Add cilantro to serve.
